Instructions
Step 1
Preheat oven to 400 Degrees.
Step 2
Combine artichokes, olive oil, garlic powder, 1/2 tsp red pepper flakes, salt, and1/4 tsp black pepper.
Step 3
Place artichokes on a baking sheet and bake for 15-20 minutes.
Step 4
Meanwhile, melt butter in dutch oven or large pot over medium heat.
Step 5
Add garlic and shallots to the butter and cook for 2-3 minutes stirring often.
Step 6
Add milk, chicken broth, 1/2 tsp red pepper flakes, and 1/4 tsp black pepper.
Step 7
Add uncooked pasta. Make sure pasta is fully submerged into the liquid and then put a lid on the dutch oven. Turn the heat down to low.
Step 8
Cook the pasta for 10-15 minutes or until al dente. Stir the pasta every few minutes to prevent it sticking to the bottom of the pan.
Step 9
Once al dente, turn off the heat. Add spinach and parmesan cheese and stir into the pastas so the spinach wilts and cheese melts.
Step 10
Add lemon juice and the roasted artichokes and combine into the pasta.
Step 11
Serve immediately and top with additional cheese if desired.
