depending on how spicy you like it - you could reduce further to 1 or 2 and remove the seeds for less heat

6spring onions
scallions, roughly chopped

2lemongrass stalks
outer leaves remove, inner stalk roughly chopped, replace with 2 tsp lemon grass paste if preferred

1 pieceginger
thumb-sized, peeled and roughly chopped, replace with 2 tsp ginger paste if preferred

4 clovesgarlic
peeled and roughly chopped

6kaffir lime leaves

1lime
zest and juice of

½ tspsalt

¼ tspwhite pepper

½ Tbspcumin

1 Tbspground coriander

1 tspshrimp paste
check for gluten-free if needed

2 tspfish sauce

1 bunchcoriander
large, cilantro, stalks too

2 Tbspolive oil

4chicken breasts
cut into bite-size chunks

4 heaped tbspThai Green Curry Paste
homemade

1chicken stock cube
crumbled, use bouillon for gluten-free

400mltin full-fat coconut milk

1 bunchbroccoli
broken into small florets

150gsugar snap peas
½ cupbamboo shoots from a tin
drained

1 tsplight brown sugar

boiled rice

thai basil leaves

red chillies
freshly chopped
