I am not a quinoa fan but had some in the pantry and all the other ingredients so thought I’d try this out! My whole family loved it. We ate it with chips and the next day we ate in burrito form. Seriously so good. It’s a perfect dinner for a family or for taking to a friend as there is so much leftovers! It’s definitely going to go in our normal rotation for dinners.

each, rinsed and drained
16 ouncestomato sauce
12 ouncessalsa verde
can sub your favorite tomato salsa, if desired
1lime
juice of, about a tablespoon
1 tablespoonchili powder
1 ½ teaspoonscumin
1 teaspoondried oregano
1 teaspoononion powder
½ teaspoongarlic powder
or 2 cloves garlic, finely minced
½ teaspoonsalt
¼ teaspoonblack pepper
3 cupschicken
cooked, chopped, rotisserie chicken works great here - you can easily leave the chicken out for a meatless dish as well
2 cupsshredded monterey jack and cheddar cheeses
fresh cilantro
chopped, for garnish
