1chickpeas can
drained and rinsed
1 tspdried oregano
½ tspsmoked paprika
½ Tbspextra virgin olive oil
0.5 bunchkale
250gtomatoes
diced
2cucumbers
medium, diced
2 Tbsphemp seeds
½ cupcashews
soaked
⅓ cuplemon juice
2 Tbspnutritional yeast
1 Tbspdijon mustard
1clove garlic
2 tspbaby capers
½ TbspWorcestershire Sauce
⅓ cupwater
Instructions
Step 1
Preheat the oven to 350 degrees F (180 C). In a bowl, mix the chickpeas with ½ tbsp EVOO, oregano, paprika, and a pinch of salt. Ensure the chickpeas are well coated.
Step 2
Spread the chickpeas on a baking sheet and bake in the oven for 15 minutes. Once done, set them aside to cool at room temperature.
Step 3
In a high-speed blender, combine the cashews, lemon juice, nutritional yeast, dijon mustard, garlic, capers, and water. Blend on high speed for 2 minutes until the mixture is perfectly smooth and creamy.
Step 4
Chop the kale and add it to a mixing bowl. Drizzle with ½ tbsp EVOO and a pinch of salt. Massage the kale for a couple of minutes to soften it and enhance its flavor.
Step 5
Add the diced vegetables, cooled chickpeas, and creamy dressing to the bowl. Mix until all the ingredients are thoroughly combined.
Step 6
Sprinkle the salad with hemp seeds and serve. Enjoy this healthy, satisfying, and flavorful Kale Caesar Salad.
