1.5 servessoba noodles

2 cupsedamame
thawed

2 cupscabbage
shredded

0.5lime
juiced

2spring onions
chopped

1cucumber
diced

1 cupmango
diced

½ cupcoriander
chopped

¼ cupmint
chopped

salt
to taste

2 Tbsppeanut butter

1 Tbspfresh ginger
or sub for 1 tsp ground ginger

1 Tbsptamari

½ Tbspmaple syrup

1 Tbsprice vinegar

½ Tbsphot sauce
more or less to taste

2 Tbspwater
if needed to thin
Instructions
Step 1
Cook the soba noodles as per the instructions on the packet. Once cooked, rinse them under cold water to stop the cooking process and to remove excess starch.
Step 2
Whisk together all the ingredients for the dressing in a bowl until well combined. If the dressing is too thick, add water to thin it out to your desired consistency.
Step 3
In a separate bowl, combine the shredded cabbage with the juice of half a lime. This will give the cabbage a nice tangy flavor.
Step 4
In a large salad bowl, combine the cooked and cooled soba noodles, lime-infused cabbage, thawed edamame, chopped spring onions, diced cucumber, chopped coriander, chopped mint, diced mango, and the prepared dressing. Mix everything together until well combined.
Step 5
Finally, adjust the salt to taste. Serve the salad immediately, or store it in the refrigerator for later. Enjoy this high-protein, easy-to-make soba noodle salad!
