Instructions
Step 1
Acquire flavorful and robust spicy Italian sausages.
Step 2
Extract the sausages from their casings and proceed to cook them in a pan over medium-high heat along with extra virgin olive oil. Continue cooking until caramelization is achieved, which usually takes around 7 minutes.
Step 3
Season the sausages with sea salt, black pepper, and then introduce 2 cloves of sliced garlic and a touch of peperoncino. Sauté this mixture for about a minute.
Step 4
Utilize approximately 250ml of dry white wine to deglaze the pan. Allow the wine to reduce until it's nearly evaporated, followed by adding 250ml of double cream.
Step 5
Blend the ingredients to achieve a harmonious mixture and reduce the volume by half until the texture becomes thick. Next, incorporate 200ml of tomato passata, which will infuse the sauce with its delightful orange hue.
Step 6
Reduce the heat to a simmer, and during this time, start cooking your pasta in boiling salted water.
Step 7
Combine the al dente pasta with the sauce, adding 1-2 ladles of pasta water to facilitate finishing the cooking process within the sauce.
Step 8
After the pasta is cooked, lower the heat and add 150g of powdered Parmigiano Reggiano cheese along with some pasta water. Blend the mixture until the cheese is melted and fully incorporated.
Step 9
Finally, introduce a generous amount of frozen peas, allowing them to cook for 1 minute. Once done, serve the dish by plating it and generously topping with additional Parmesan and fresh parsley.
