soaked in 1/2 cup hot water, or 3/4 tbsp tamarind concentrate/2 tbsp paste

6green chilies
low to medium heat variety or mixed

¾ teaspoonmustard seeds
optional

¼ teaspoonkalonji seeds

1 teaspooncumin seeds

1 sprigcurry leaves

1 teaspoonsea salt

½ teaspoonturmeric

1 teaspoonkashmiri red chili powder

1 teaspoongaram masala
or 1 tsp coriander powder + 1/2 teaspoon cumin powder

1 tablespoonjaggery
or brown sugar, adjust to taste
