1bread roll
or focaccia bread

0.5 packhalloumi sliced

1tomato
sliced

2lettuce leaves

black olives
halved

0.5red onion
finely sliced

5 sprigsoregano
finely sliced

0.25cucumber
grated and squeezed to remove the excess liquid

2 Tbspplain yoghurt
greek yoghurt

½ Tbspolive oil

0.5lemon juiced

1garlic clove
minced

1 tsppepper

½ tspsalt

5 sprigsfresh mint
finely chopped
Instructions
Step 1
In a small bowl, combine all of the Talatouri ingredients. Set aside.
Step 2
Prepare your sandwich ingredients: tomato, lettuce, olives, oregano, bread, red onion.
Step 3
Get yourself a pan and place it on medium heat. Drizzle over some olive oil and add in your sliced halloumi. Fry on each side for 4 minutes or until golden. Remove the halloumi ready to assemble your sandwich.
Step 4
Time to assemble your sandwich. Lightly toast your bread and then spoon on your Talatouri. Layer on your halloumi, red onion, tomato, olives, oregano, lettuce, and your second piece of bread. Serve up and enjoy!
