Instructions

Step 1
1. Lightly fry the onions, pepper and tomatoes in the oil until nicely toasted, about 5 minutes.
Step 2
2. Remove the skin from the tomatoes and place the onions, pepper and tomatoes into a mortar.
Step 3
3. Add in the olives, garlic, chilli and seasonings and mash until smooth.
Step 4
4. Spread this across one slice of bread. Layer lettuce and cucumber onto the other slice.
Step 5
5. Sandwich the two slices together and cut in half. Enjoy!
