I made tacos with rice, beans, sauteed onions, and guac. I didn't have chipotle or poblano peppers so I substituted with jalapeno and bell pepper and it turned out delicious.

Loved this! It was definitely spicier than Chipotle's version, so I think I'll add less chili next time. I mixed the sofritas with brown rice, black beans, lettuce, salsa and roasted bell pepper.
