I used whole milk

uncooked, cooke al dente-, I used cavatappi

2 cupsbaby bella mushrooms
sliced, or button mushrooms

1 cupsweet onions
diced

2 clovesgarlic
finely diced
14 ouncesartichoke hearts can sliced

3 ouncessundried tomatoes
reconstituted and sliced

14 ozcherry tomatoes with juice
2 cups fresh cherry tomatoes can be used instead

1 cupkalamata olives
sliced

1 Tbspbasil
finely chopped

1 TbspItalian parsley
finely chopped, save a little to garnish the mozzarella, so it melts in

1 cupshredded mozzarella
more or less as desired
