Instructions

Step 1
Cook the pasta in salted boiling water. Keep 1/2 cup of pasta cooking water. Then drain and set aside.
Step 2
Cook the bacon in a large pot over medium heat. Allow the fat to slowly render down. After that, add in the chopped onion. Cook until the onion is soft and translucent, which should take about 4-5 minutes.
Step 3
Add the cheese (cut into pieces) and let melt with the lid on for about 5 minutes over medium heat.
Step 4
When the cheese is melted, add the heavy cream and the pasta cooking water (start with 1/4 cup and add more if necessary). Stir until it becomes smooth and silky.
Step 5
Toss the pasta with the sauce. Feel free to add a little pasta cooking water if necessary, to help the sauce bind to the pasta.
Step 6
Add honey and thyme and salt and pepper to taste. Serve hot and bon appétit !
