minced, about 4-5 cloves per 2 TBSP

2 tablespoonstomato paste

1.5 poundsbaby gold potato
washed and cut in half

6 ouncesmushrooms
cut in half or quartered depending on the size

3 cupsunsalted beef stock

3dry bay leaves

3 teaspoonskosher salt
or to taste

½ teaspoonscracked black pepper
or to taste

3 ½ tablespoonscornstarch
mix every 3 1/2 TBSP of cornstarch with 3 TBSP of water to make a slurry

1 cupfrozen peas

Parsley
finely chopped, optional for garnish
