This black lentil and quinoa salad is packed with all my favorite summer vegetables, from tomatoes to peaches to cucumber, and the limey, sweet and spicy coconut milk dressing is the perfect partner for it. This salad is equal parts fresh and craveable, and the best part is that it's perfect for meal prep. The longer it sits, the better it gets.
