Creamy White Bean Soup with Kale

We added extra ground turkey and eggplant. It was super hearty, savory and filling.

Full bodied and delicious! And this, coming from someone who is usually not a fan of kale.

I made a more basic version, without rosemary and kale. Still came out great

Added extra veggies, cannelini instead of navy beans, used immersion blender, topped with nooch. Yum!

Add ground Italian sausage and sub collard greens

Added italian sausage and didn't use the spice. Very tasty

So good! This is one of my new favorite soups.

If you like bean soups, this is a must - it's absolutely delicious! Be careful not to include too much red pepper flakes (I add them to taste at the end).

My 5 and 6 year-olds loved it and asked me to "keep the secret recipe!"

Made it in my crockpot and added quinoa. Didn't have kale. Added frozen chopped turnip greens instead. My family loved it.

Delicious! I added in some parmesan cheese to give it more of an umami oomph
