I substituted broccoli for the zucchini. I blanched the broccoli and added it at the end so it remained crisp. I added rotell chopped tomatoes with mild green chillies drained. Delicious!
Up the salt and cumin, add some pepper, extra garlic, and the whole jalapeno. It's delicious!
