Fair warning - I did not have all the Veg ingredients because by the time I got to this dish I was in an insane hurry to get supper on the table. That said, huge props to this dish for being so easy to come together, and even bigger props for being utterly delicious! Honestly, just thinking about it is making me salivate... Yeah, it's really fresh, crisp, savory, tangy and slightly sweet. Will happily make this again.
