Instructions

Step 1
Thinly slice the steaks into strips and add to a bowl with 2 tbsp of fish sauce and mix well then set aside.
Step 2
In a separate bowl add the sauce ingredients, mix well and set aside.
Step 3
Thinly slice the shallots, chillis and garlic cloves and then slice up the Bok choy, spring onions, and bell pepper and finely chop up the coriander.
Step 4
Heat a wok and add 2 tablespoons of vegetable oil. Add in the beef strip and cook until they are brown all over, remove to a bowl and set aside.
Step 5
Add another 2 tablespoons of vegetable oil and add in the shallots and cook until they become opaque.
Step 6
Add in the garlic slices and cook for a further 30 seconds.
Step 7
Add in the chopped chilli and cook for a minute.
Step 8
Add in the bok choy slices and bell pepper and cook for 2/3 minutes continuously stirring.
Step 9
Add in the rice noodles and toss, ensuring that all the ingredients are mixed.
Step 10
Add in the cooked beef and spring onions and mix.
Step 11
Pour the sauce mixture evenly over the ingredients of the pan, turn off the heat and mix the ingredients.
Step 12
Sprinkle with coriander and plate up. Lick you’re lips and enjoy.
