Ricotta cheese; 1/2 Cup grated parmesan; 2 Cups cooked shredded chicken; 1 Egg; 1/4 Cup sour cream or substitute w. plain yogurt; 1 Tbsp Cajun seasoning; 1/2 Tsp black pepper; 1/2 Tsp salt; 2 Tsp chopped fresh parsley; 4 Tbsp salted butter; 3 Chopped fresh garlic cloves; 16-20 cherry tomatoes; 1 ¼ Cup heavy cream; 1 Cup skim or 1% milk; 1/2 Cup grated parmesan cheese; 1 Tbsp flour (heaping); 2 Tsp Cajun seasoning (optional for additional heat)
