Last week , I had prepped this cashew chicken, and originally, I was going to use frozen Thai vegetables.
During the week, my chicken & red pepper were used elsewhere, so I was left with 1 breast.😆 I used up 1 green & 1 yellow peppers from the crisper. I also used steamed broccoli M made from earlier in the week. It was veggie packed and stretched out the chicken beautifully! 😍
Absolutely delicious and makes exciting leftovers!
