Small swaps can go a long way to getting the cost of your grocery shop lower – so to create this easy and budget-friendly recipe for our Savvy Dinner Plan I’ve taken inspiration from our most popular fish cakes recipe and reworked the ingredients list to make it shorter. I present to you my easy tuna and rice patties, which have already become a regular addition to my dinner recipe repertoire. They’re flavourful (I’ve added fresh herbs, shallots, garlic and lemon zest), nutritious (hello, tuna and brown rice), substantial and easy to make. Better yet, kids are bound to enjoy them too. Panko crumbs bring a delicious crispiness to these patties, while grated cheddar makes for a delicious, cheesy centre. How to make my budget-friendly easy tuna and rice patties: key ingredient swaps By swapping canned red salmon for Coles Simply Tuna in Vegetable Oil, I’ve reduced the overall cost. This tuna is a savvy little budget-saver. It’s moist and flakes well to evenly distribute in the mixture, helping it bind together to make perfectly-shaped patties. And, here’s another little tip: using the reserved oil from the can to fry the onions is a wonderful flavour enhancer. The brown rice is not only a perfect way to stretch the mixture further, but it’s a hidden way to get more wholegrains into family meals. Serving brown rice as a side dish can lead to dinner table protests, but hiding it in things like patties and rissoles is a handy trick to know! Save even more across the month with the Savvy Dinner Plan The taste + Coles Savvy Dinner Plan is full of clever ways to use ingredients across multiple meals. You can use leftover shallots in the sweet and sour pork sausages, dump-and-bake creamy chicken pasta and hidden-veg porcupine meatballs as part of the Savvy Dinner Plan.
