Crockpot Thai Chicken Curry

It was OK. I do love Thai sauces of any kind. This was a touch bland and a touch too sweet for us personally. Probably won't make the list of redos right away. I would still recommend and as always season to personal taste.

Made this as a take-along dish for a camping weekend. I prepped the sauce ahead of time and put in a large jar for transport. I also made this in a skillet by sauteing the chicken and bell peppers (also added red onion), then added the sauce, and simmered for 10-15 minutes in an electric skillet. Quick meal, rather than a crock-pot meal. It was a hit with all our friends.

Yum!! Instead of sautee'ing the veggies and adding them after the meal cooked, I just threw them in the crockpot 🤷‍♀️ And added a lot of spice 🌶 So good!

We spice this up a bit. It is delicious and so easy!
