Recipe is great ! Made it for my homesick boyfriend for the new year, he absolutely loved it ! I don’t think the recipe states this, but to get a truly authentic оливье the carrots and potatoes should be diced small, a little bit smaller than an American potato salad. And next time, I’ll use diced pickled garlic instead of real garlic clove. I couldn’t cut the cloves as small as I like, and the raw clove was a bit spicy and strange to eat when you got a bite with it. I think jarred garlic would distribute flavor well through the dish and give a better taste. Personally, I’d also add more of the white wine vinegar because I like the sourness from the vinegar and dill pickle in my dish. A wonderful recipe ! This tasted really great, I will definitely be making this again. And not just for the new year !
