1. Cook and shred the chicken

Heat the oven to 350 degrees.
Pour a layer of enchilada sauce onto two 9x13 pans just enough to cover it. Mix together the shredded chicken, black beans, corn, diced tomatoes, and 2 cups of the cheese along with most of the rest of the enchilada sauce.
Put some of the mixture in all of the tortillas, roll them up, and place them side by side in the pans. Cover the tortillas with enchilada sauce and the remaining cheese.
Cover with aluminum foil.
Cook in the oven for 30 minutes. Start cooking the rice and the refried beans. Remove the aluminum foil from the enchiladas after 30 minutes. and cook the remaining 5 minutes without. Remove from oven and enjoy!
