Smoky chorizo tacos, made vegan 🌮
In Episode 7 of Veganuary for Meat Eaters, I had to tackle everyone’s weakness, processed meat 🍖 my plant based alternative has nearly half the fat content of its meaty counterpart (56g vs 95g!!!) & will leave you feeling SO much lighter!

Ingredients

For the Tofu Chorizo

225gsmoked tofu
patted dry

2 Tbspsmoked sweet paprika

1 tspcayenne pepper

1 tspcumin

2 Tbspmaple syrup

3 Tbsptomato puree

4 Tbspoil
I used sun dried tomato oil

1 tspsalt

1 tspblack pepper

6sundried tomatoes
chopped
To Serve
Instructions
Step 1
1. Preheat your oven to 190c.
Step 2
2. Roughly crumble the tofu, then add to a bowl with your remaining ingredients aside from the sun dried tomatoes, and mix well.
Step 3
3. Add to a lined baking tray and spread out the mix evenly.
Step 4
4. Bake for 18-20 minutes, stir & turn the mix regularly as this will colour very quickly! Add another extra drizzle of oil if it starts to dry out
Step 5
5. Remove from the oven and leave to cool slightly.
Step 6
6. Heat up your tortillas, and layer each one with a tbsp of sour cream, a couple of slices of avo and the vegan chorizo. Top with feta, a jalapeño slice and a squeeze of fresh lime.
