Instructions

Step 1
Boil water. Roughly chop bok choy, mince ginger and garlic and scallions to taste.
Step 2
Heat olive oil on med high. Brown pork seasoned with salt and pepper, ~5 min. Add ginger, garlic, scallions.
Step 3
Add bok choy, black bean sauce, and 1 tbsp water. Cook ~4 min until liquid cooks off and pork is cooked. Turn off heat.
Step 4
Add rice cakes to boiling water. Cook 2-3 min, then drain.
Step 5
Add rice cakes and creme fraiche to pan. Stir to combine.
