Sweet and Spicy Shrimp Noodles

Bouncy noodles coated in a delicious sweet and spicy gochujang based sauce. I served these noodles with garlic shrimp but you can also serve them with your protein of choice!

3 Tbspsoy sauce
2 Tbspapple cider vinegar
3 Tbspoligo syrup
or honey
1 Tbspbrown sugar

Instructions
To make the sauce,
Step 1
in a small bowl, combine the gochujang, soy sauce, apple cider vinegar, oligo syrup (or honey), brown sugar, and sesame oil.

Step 2
stir the ingredients together until well combined and the sugar has dissolved.

taste the sauce and adjust the ingredients according to your preference. you can add more sweetness with additional brown sugar or oligo syrup, more spiciness with extra gochujang, or adjust the acidity with more apple cider vinegar.
To cook the noodles,

bring a pot of water to a boil and cook the sweet potato noodles according to package instructions. usually, this calls for a 6–8 minute cook time.

once the noodles are cooked, drain and rinse them under cold water to stop the cooking process. drain well and set aside.
To make the garlic shrimp,

in a large skillet or wok, melt butter over medium heat.

add minced garlic to the skillet and saute for about 1 minute or until fragrant.

add the shrimp to the skillet in a single layer and season them with black pepper.

cook the shrimp for 2-3 minutes per side until they start to turn pink and curl up.

once the shrimp are cooked through and opaque, remove them from the heat.
To stir fry the noodles,

in the skillet with the remaining sautéed garlic and butter, add sesame oil and cooked sweet potato noodles.

stir fry the noodles over medium heat for about 2-3 minutes to coat the noodles with the residual garlic butter.

add the sauce to the noodles and toss everything together until the noodles are well coated with the sauce. stir fry for an additional 2-3 minutes. i recommend starting with ½ of the sauce and tasting as you go as the sauce can be a bit spicy.

taste the noodles and adjust with additional sauce, black pepper, or soy sauce.
Step 15
add the cooked shrimp back in and garnish with scallions and sesame seeds.

enjoy! the noodles can be served hot, room temp or cold. if refrigerating, reheat the noodles for 1-2 minutes in the microwave to soften them before eating.
