P - Meat-filled Aubergine

Instructions

Step 1
Preheat over to 180C fan / 350F
Step 2
Slice the aubergine in half, length-wise and place on a very lightly oiled glass baking dish.
Step 3
Bake in the oven 15-20 minutes, or until soft.
Step 4
Meanwhile, heat a small amount of olive oil in a frying pan.
Step 5
Once hot, add the onion and garlic and cook 3-4 minutes, or until onion is beginning to soften.
Step 6
Add the mince and cook until browned.
Step 7
Remove aubergine from the oven and set aside to cool.
Step 8
Add the herbs, spices and tomato puree to the mince.
Step 9
Cook for 1-2 minutes and then add the diced tomatoes.
Step 10
Simmer for 20-30 minutes over a low heat.
Step 11
Whilst the mince is simmering, carefully scrape the flesh of the aubergine away from the skin, leaving the shells of the aubergine intact.
Step 12
Mash the flesh of the aubergine and add to the mince once it is done simmering.
Step 13
Place the meat mixture into the aubergine shells and serve with a side of rocket.
