Instructions

Step 1
Dice potatos into preferred size and boil until cooked half way. (Don't let them go too soft or they'll fall apart)
Step 2
Finely cut spring onion and bacon. Then finely dice onion & set aside into individual bowls.
Step 3
Boil eggs. Once boiled, Peel and mash with fork to preferred sizing.
Step 4
While eggs are boiling cook the bacon on low heat. Remove then lightly cook red onion for 1minute, continuously shirring.
Step 5
Once your potatos, bacon, onion & eggs are cooked. Cool in fridge for 20mins
Step 6
Once potatos are cooled. Toss all ingredients together to combine.
