Instructions
Step 1
Combine cottage cheese, egg, flour, baking powder and cinnamon in a blender until smooth.
Step 2
Add banana and ¼ cup blueberries and pulse once or twice, dont blend. Gently fold through another 2 tbs blueberries.
Step 3
Heat a large non stick fry pan over medium heat. Pour in 1/4 cupfuls of mixture, when bubbles appear on the surface, flip and cook for a few more minutes. Keep pancakes warm whilst cooking the remaining mixture.
Step 4
Divide pancakes between plates, top with yoghurt, nuts, remaining blueberries and dust with cinnamon to serve.
