For the chicken brine

4chicken thighs
bone in

4chicken drum sticks

seasoning mix

2 cupspickle juice

4 cupsbuttermilk

3 pinchessalt

2 tspcayenne pepper
For the breading
For the Spicy “ HoT” oil

2 tspcayenne pepper

1 ½ tspsmoked paprika

1 ½ tspchilli powder

1 ½ tspgarlic powder

Hot, from the pot, you fried the chicken

1 ½ tspSeasoning Mix
For Frying
Instructions
Brining and marinating chicken
Step 1
Clean off the excess fat off the chicken then place into a large bowl

Step 2
Seasoning with the listed spices, then add the pickle juice and buttermilk

Step 3
Allow to brine in the fridge for a minimum of 2 hours
Battering the chicken
Step 4
Drip off excess liquid off the chicken then add to your flour & potato starch mix. Coat it thoroughly then shake off excess flour
Step 5
Quickly dip it back in the buttermilk mixture then add it back to the flour & potato starch mix. coat it thoroughly then let it rest on wire rack

Add enough oil to deep fry in a large pot , allow it to react 350-365 degrees Fahrenheit

Step 7
Fry the chicken in batches do not overcrowd the pot! Cook the chicken until it reaches 170 degrees F. thighs might take 12-14 minutes , drumstick might take 9-11 minutes. Depending on size

Once you’ve fried the chicken. Let it cool on dry rack to help it stay crispy
Step 9
Add the listed spices in aluminum bowl or ceramic bowl. Then add a few scoops/latos of the hot oil you fried the chicken .
Step 10
Mix the hot oil with the spices and then using a brush, brush the spicy oil on the chicken!
