Vegetable bisque
I’m on a full liquid diet post bariatric surgery. I decided to get creative and this is an excellent tomato soup replacement.

Step 1
I roasted two whole garlic bulbs and sliced the top off with the rest of the vegetables. The onion, carrots, and peppers were all chopped. The grape tomatoes are thrown in whole with the feta cheese. Spritz everything with avocado oil spray and roast for 40-45 minutes at 375. Once roasted, mash tomatoes a bit and toss everything in a blender. Blend until all solids are gone. Add up to 20 oz of chicken broth depending on desired thickness. I portioned into 2 oz servings due to my dietary requirements
