Step 1
Heat oil in a nonstick skillet over med heat until shimmering. Stir in garlic and 1/2 tsp chipotle; cook until fragrant. Stir in 5 tbsp cilantro, orange juice, and Worcestershire. Lay chicken in a skillet and bring to a simmer over med-low heat for 10-15 minutes.
Step 2
When liquid is simmering, flip the chicken, cover, and cook until the chicken registers 160 degrees, 10-15 minutes.
Step 3
Transfer chicken to cutting board, let cook slightly, then shred into bit size pieces. Simmer poaching liquid over med heat until thickened and reduced to 1/3 cup, about 2 minutes. Off heat, stir in mustard, 2 tbsp cilantro, and shredded chicken, and let sit until heated through 2 minutes—season with salt and pepper to taste.
Step 4
Combine sour cream, remaining chipotle, and cilantro in a bowl—season with salt and pepper to taste. Serve chicken with warm tortillas and sour cream sauce.
