MEXICAN BREAKFAST FOR WEIGHT LOSS: HIGH PROTEIN QUESADILLAS DE CHORIZO Y CHAMPIÑONES 🍄
This recipe was inspired by freddster but I wanted to make it higher protein & higher volume since I’m on a fitness journey 💪🏽With a few substitutions, I was able to keep 4 quesadillas to 400 calories & pack over 30 grams of protein 🔥 You can use pork chorizo or soyrizo; the macros are almost identical!

For the tacos
Instructions
Step 1
1. Finely dice the onions and mushrooms. The smaller the pieces are, the more they will blend in with the chorizo.
Step 2
2. Add the chorizo to a hot pan and break apart. Cook for 3 minutes.
Step 3
3. Mix in onions and cook for 3 minutes.
Step 4
4. Mix in mushrooms and cook for 4 minutes.
Step 5
5. Add in egg whites and cook until everything is cooked thoroughly. This will make chorizo filling for 4 servings.
Step 6
6. To assemble the quesadillas, add 14 grams of fat free cheese and .9 oz of chorizo filling (divide the 3.75 oz amongst the 4 quesadillas)

7. Warm a comal and once hot, add oil spray.
Step 8
8. Add the quesadillas to the comal and fold. Cook for 2 minutes on each side or until golden brown.
