Hoisin udon with chicken & mushrooms
Hoisin udon noodles with chicken & mushrooms are a family approved and super easy & quick meal. Can skip either the mushrooms or the chicken, or sub pork.

Step 1
Trim and cube chicken, slice mushrooms. Sauté in a tbsp of olive or canola oil. Mix sauce ingredients together. When chicken and vegetables are nearly cooked, blanch udon in boiling water for 2 minutes. Drain and add to pan along with sauce. Cook until thickened. Serve topped with green onions, and sriracha if desired.
