Ingredients

2 tablespoonsolive oil
4garlic cloves
crushed
1onion
finely diced
2carrot
large, finely diced
2 stalkscelery
finely diced
1.5 poundlean ground beef
2 cupsbeef broth
28 ouncescrushed tomatoes san marzano
6 oztomato paste
1 tbpsdried rosemary
1 Tbspthyme
2bay leaves
½ teaspoonsalt
½ teaspoonblack pepper
16 ozprotein pasta
Instructions
Step 1
In a large pot on medium heat, cook vegetables in oil over medium heat until softened, about 3-4 minutes.
Step 2
Make a well in the middle of the pan and add beef. Season the beef with salt and pepper. Let it develop a crust and mince. Cook until no more pink and combine with vegetables.
Step 3
Add the tomato paste, crushed tomatoes, and beef broth. Mix until everything is combined.
Step 4
Add the herbs, then reduce to low and simmer. (The longer the better)
Step 5
Cook pasta according to package directions. Drain, reserving 2/3 cups of pasta water.
Step 6
Remove the bay leaves, then add the pasta water into the sauce.
Step 7
Add the pasta and toss to combine. Add parmesan on top for garnish and enjoy!
