Instructions

Step 1
1. Preheat your oven to 200c fan.
Step 2
3. Blend the coconut milk with curry paste, ginger, fish sauce, sugar and a little fresh coriander.

4. Tip the rice into a baking dish, and scatter over the vegetables. Top with the cod fillets and add a slice of lime over the fish. Pour over the coconut milk sauce. Seal the dish with tin foil.

5. Bake at 200c fan for 20-30 minutes until bubbling and the fish is cooked (everyones oven is slightly different, so just cook it until its done!)
Step 5
6. Finish with an extra scattering of spring onion, coriander and some fresh red chillis if you like!
