Carrot, apple and date Birchers Muesli
A revamp on an old favorite. This is refreshing juicy and nutritious! Great to make a weeks supply in little jars. Keeps on the fridge for a week. Have plain topped with a heavy sprinkling of cinnamon or top with freshly grated carrots, chopped nuts seeds and a drizzle of honey. To boost gut health you can add a probiotic to the mixture. Add turmeric to taste as an option.

Ingredients
1 servings
½ cuprolled oats
½ cupplain yoghurt
full fat lactose free
½ cupalmond milk
1carrot
small, finely grated
1Golden delicious apple
finely grated
2medjool dates
chopped coarsely
1 tspfresh ginger
finely grated
1 Tbspmaple syrup
1 tspcinnamon
sprinkled over top
1 tspnPumpkin seeds
1 tspsunflower seeds
1 tablespooncashew nuts
chopped or flaked
Instructions
Step 1
Combine all the ingredients to a glass jar and place in the refrigerator overnight or for at least a few hours.
Shake it all well and if all the liquid has bee absorbed, feel free to add a splash or two of milk so that you can stir everything up.
Sprinkle cinnamon over and enjoy
