Lightened Up Spinach Artichoke Dip

Classic Spinach Artichoke Dip is a game day staple, but also a calorie bomb. I lightened it up here by avoiding all the cream cheese, mayo, sour cream, or ranch, but still while preserving that great taste. This goes great with some carrots, crackers, or on a sandwich or toast. This dip is significantly lower in calories and fat, while also being higher in protein, making it more filling and full of nutrients than the original. Instructions

Preheat oven to 400F. Drain and rinse your artichokes, and chop into small pieces. Squeeze your defrosted spinach until dry

Directly in a 9" square baking dish, mix together the artichokes, spinach, yogurt, cottage cheese, 1/2 cup (56 g) shredded mozzarella, 1/2 cup (56 g) shredded cheddar, grated cheese, olive oil, and black pepper. Top with your remaining 1/4 cup (28 g) of shredded mozzarella and 1/4 cup (28 g) shredded cheddar
