Lightened Up Spinach Artichoke Dip

Classic Spinach Artichoke Dip is a game day staple, but also a calorie bomb. I lightened it up here by avoiding all the cream cheese, mayo, sour cream, or ranch, but still while preserving that great taste. This goes great with some carrots, crackers, or on a sandwich or toast. This dip is significantly lower in calories and fat, while also being higher in protein, making it more filling and full of nutrients than the original. Ingredients
8 servings

14 ozcan artichokes
drained and rinsed

142gfrozen chopped spinach
defrosted

1 cupplain nonfat Greek yogurt

½ cupnon fat cottage cheese
whipped

¾ cupshredded mozzarella cheese
low moisture part skim, divided

¾ cupshredded cheddar cheese
divided

¼ cupparmesan cheese
grated

15gextra virgin olive oil

1 tspblack pepper
Instructions
Step 1
Preheat oven to 400F. Drain and rinse your artichokes, and chop into small pieces. Squeeze your defrosted spinach until dry
Step 2

Directly in a 9" square baking dish, mix together the artichokes, spinach, yogurt, cottage cheese, 1/2 cup (56 g) shredded mozzarella, 1/2 cup (56 g) shredded cheddar, grated cheese, olive oil, and black pepper. Top with your remaining 1/4 cup (28 g) of shredded mozzarella and 1/4 cup (28 g) shredded cheddar









Step 3

Bake at 400F for 25 minutes (uncovered), or until lightly bubbly. Let cool for a few minutes before serving
