Chicken & Nduja Wellington with Creamy Chive Sauce

Instructions
Step 1
Preheat the oven to 200°C. Add the waxy potatoes and halved tomatoes to an oven-proof dish with olive oil and a generous seasoning of salt and pepper. Put the dish in the oven for 25 minutes.
Step 2
Cut a deep pocket along the top of the chicken. Fill with Nduja and season generously with salt and pepper.
Step 3
Dust the bench with flour. Roll out the puff pastry to approx. 0.5cm thickness and cut into two.
Step 4
Wrap the chicken in the puff pastry, sealing the edges with a fork. Drizzle each parcel with olive oil. Add to a baking tray and cook for 25-30 minutes.
Step 5
Put broccoli in a small saucepan with boiling water and cook through. Drain.
Step 6
Remove the veg from the oven and crush the tomatoes with a fork. Add the peas, cream, chicken stock, garlic and cook for a further 10 minutes. Sprinkle chives over the top.
