AVOCADO CREAM & BLACK BEAN TACOS

This little tacos recipe is really no fuss to make but tastes so delicious. The combo of creamy avocado cream with fresh mango and nourishing black beans really does it! And, of course, the pickled onions are an amazing addition. Did you know pickled onions are so easy to make? I always have a big jar in my fridge. Check out the recipe here.
I absolutely love this with some homemade roasted sweet potato chips 💛
Tip: if it’s not currently mango season, you can use frozen mango, it’s even easier to dice half thawed.

Instructions
Step 1
Blend all the cream ingredients together.
Step 2
To a pan on medium heat, add the black beans, corn, and adobo sauce. Cook for 5 minutes, stirring regularly.
Step 3
Heat up the tortillas, and top with avocado cream, the bean mix, diced avocado, fresh cilantro and pickled onions.
Step 4
Serve with fresh lime and enjoy!
