2Green Pepper
thinly sliced

2 CanBlack Beans
rinsed and drained

Flour Tortillas
2 TbspFire-roasted Tomato Puree
Shredded Mexican Cheese

Monterey Jack
Shredded
Smoky Red Pepper Crema
Sour Cream with something
Instructions
Step 1
1. Slice green peppers and cook in pan over medium-high heat 2-3 mins. Add 4 Tbsp water and cook, stirring 2-3 more mins
Step 2
2. Reduce heat to medium and add beans, fire-roasted tomato puree, 1/3 C water. Cook stirring until thickened, 2-3 mins.
Step 3
3. Sprinkle one half of each tortilla with Mexican cheese blend.Top with veggie
Step 4
filling, then sprinkle with Monterey jack. Fold tortillas in half to create quesadillas
Step 5
4. Heat pan to medium heat with oil.Add quesadillas and cook until tortillas are browned and cheese is melted, 3-5 mins per side.
