Step 1
First grate the cheese
Step 2
Put the water on to boil for the pasta in a large pot

Once boiling add the pasta and stir, turn to medium high heat to keep it bubbling

Open and drain the tuna if using

Cook pulses in a pot for a few mins (just before the pasta is done) until just before boiling and drain

Drain the pasta and mix in the sauce and other ingredients
For the tomato sauce

Add oil into a pan and turn to medium heat

Crush the garlic into the olive oil

Once the garlic starts to turn brown (about a minute later) add any other aromatics like leeks, onion etc and sauté for a couple of minutes, then add passata to cover the pan

Add pepper and stir the sauce

Put lid on the pan and turn the heat down slightly and leave to simmer, stirring intermittently and swirling the pan so sauce covers it evenly
Step 12
Add any vegetables or pulses to the tomato sauce and stir intermittently
