Step 1
Fry chopped onion and garlic, allow to cool. Blitz cod, add chopped ginger and spices. Combine with half of onion mix, breadcrumbs, beaten egg, preserved lemon, herbs , salt and pepper. Mould into flat cakes and fry 2-3 mins on each side.
Step 2
Add small tin of tomatoes to left over onion mix, add stock, harissa and sugar. Allow to reduce over low heat.
Step 3
Cook papardelle or tagliatelle in large quantity of water with salt. Strain and fry quickly in olive oil before serving with tomato sauce and two fish cakes per person.
Step 4
Serve with generous sprinkle of basil
