Skinless & Boneless

1 BunchKale
stem removed & chopped

½ cupdried cranberries

1 Cupcherry tomatoes
halved, optional

½ cupgrated parmesan

2 Tbspolive oil
Marinade

Instructions
Step 1
In a large bowl, thoroughly massage chopped kale with salt, pepper, and olive oil. Allow resting while cooking chicken


Step 2
In a large shallow plate, combine marinade





Step 3
Marinate chicken for 5 minutes; then cook on each side over medium low in a large skillet about 8 minutes on each side until browned or cooked through)

Step 4
Remove to a cutting board and allow chicken to rest 5m before dicing
Step 5
In a large salad bowl, combine chopped kale, cherry tomatoes, cranberries, parmesan, and diced chicken



Step 6
Combine chipotle dressing and honey in small bowl and drizzle over salad
Step 7
Toss and Enjoy
