Instructions
Step 1
Cook the guanciale or chosen meat until it is crispy. Set aside for later.

Step 2
Bring water to the boil and cook the pasta according to packet instructions.

Step 3
Combine beaten egg yolks, vegan cheese, salt and pepper in a bowl.




Step 4
Add a ladle full of the pasta water to the egg and cheese mixture.
Step 5
Drain the pasta and combine with the meat and sauce mixture off the heat.
Step 6
Serve with some coriander on top.
