Instructions
Step 1
roast a red bell pepper with olive oil in oven or char by itself in a cast iron. Do not cut the stem, this will steam the inside.
Step 2
then cut the stem off and chop into 4ths or 6ths
Step 3
blend the bell pepper, a decent amount of cream cheese, a tbp of olive oil, a pinch of red chilli flakes, and a pinch of salt and pepper.
Step 4
boil pasta and strain (do not rinse). save the water
Step 5
Slowly add in the pasta water to the blender until perfect consistency (not runny!!!)
Step 6
pour sauce over pasta and sprinkle parsley on top 😊
