Instructions

Step 1
Preheat the oven to 400 degrees. Season the chicken with salt, pepper, and 1/2 of the taco seasoning.

Add the cooked rice to a greased 9x13 dish. Mix in the black beans, corn, 1 1/2 C of the salsa, and remaining taco seasoning and stir well.

Place the seasoned chicken on top of the rice mixture and pour the remaining salsa on top of the chicken.
Step 4
Bake for 20–25 minutes.

Remove from the oven and add the shredded cheese. Bake another 5 minutes.

Allow to cool for 5 minutes before serving and enjoy with sour cream, guacamole, or queso!
