Creamy Salmon & Broccoli Pasta!

Ingredients
2 servings
2 x 125gskinless boneless salmon fillets
120gdry pasta
I used penne
1 tspsalt
for pasta water
2shallots
small
100gtender stem broccoli
100gcherry tomatoes
2garlic cloves
80greduced fat crème fraîche
20ggrated parmesan
0.5 mugpasta water
1lemon
20 spraysFrylight
parsley
chopped
½ tspsalt
1 tspground pepper
2 tspcajun seasoning
Instructions
Step 1
1. Prep veg by dicing the shallots and garlic, halving the cherry tomatoes and chopping up the tenderstem broccoli
Step 2
2. Start by laying your salmon fillets onto a baking tray and spraying all over with some Frylight cooking spray
Step 3
3. Then sprinkle over 1/4 tsp of salt, 1/2 tsp of black pepper and 1 tsp of Cajun seasoning and massaging all over
Step 4
4. Place into a preheated oven at fan 180° for 12-14 mins and remove once cooked.

5. In the mean time, add salt to boiling water and add your dry pasta for about 8 mins until cooked. Reserve some of the pasta water and drain
Step 6
6. Whilst the pasta is cooking, spray some Frylight into a medium hot pan and add your shallots, broccoli and cherry tomatoes
Step 7
7. Stir occasionally and fry for around 5 mins before adding the diced garlic and sprinkling over the 1/4 tsp of salt, 1/2 tsp of black pepper and 1 tsp of Cajun seasoning.

8. Stir through and continue to fry for another 2 minutes
Step 9
9. Reduce the heat to low and add the reserved pasta water. Then spoon in the crème fraîche and stir through to make a sauce.
Step 10
10. Finish the sauce by sprinkling in the Parmesan, squeezing in half a lemon juice and adding a handful of chopped parsley.
Step 11
11. Stir again to combine before adding in the drained pasta and fully mixing together.
Step 12
12. Serve into two equal portions and top each one with a salmon fillet.
Step 13
13. Garnish with some additional chopped parsley and an additional squeeze of lemon juice.
