Instructions

Step 1
Once prawns are defrosted, peel the prawns but leave the tail on.
Step 2
Cut a slit in the back of the prawns and remove the vein.
Step 3
In a hot pan, heat some oil.
Step 4
Add the minced garlic and ginger.
Step 5
When it turns golden add the onions, saute for about one minute on medium heat then add the tomatoes.
Step 6
Mix then add the salt, then cover for about 3 mins on medium heat, stirring occasionally to ensure it doesn't stick to pan.
Step 7
Remove the skin from the tomatoes.
Step 8
Stir then gently mash the tomatoes. Cover with a lid for about 7 mins on low to medium heat, stirring occasionally.
Step 9
Once the tomatoes and onions have mashed, add the spices.
Step 10
Mix the spices in and let it cook for about one minute then add the water.
Step 11
Stir and cook for about 4 minutes.
Step 12
When the oil separates that's when your spices have cooked.
Step 13
Stir the yoghurt then add to curry.
Step 14
Mix that in then add the capsicum and bullet chillies. Bullet chillies are to taste.
Step 15
Cook for about 2-3 mins to slightly soften the capsicum.
Step 16
Next add the prawns, mix then cover with lid on medium heat for about 7 mins or until your desired sauce consistency.
Step 17
Finish with a squeeze of fresh of lemon juice and fresh coriander.
